I have tried a lot of corn bread recipes and this is my favorite. This is also healthier then other recipes.
1 c. yellow corn meal
1 c. flour
1/4 c. sugar
1 T. baking powder
1/2 t. salt
3 T. wheat germ (optional)
1 c. milk
3 T. vegetable oil (grapeseed oil)
3 T. unsweetened applesauce
1 egg
Combine corn meal, flour, sugar, baking powder, salt and wheat germ. Add milk, oil, applesauce and egg. Mix well. Add milk and stir until blended. Pour into 8 or 9 inch square baking pan. Bake at 400 for 20-25 minutes. Serve warm.
